Maple Pecan Pumpkin Whoopie Pies

Hi friends! It has been crazy around my neck of the woods and I love when I can toss together simple ingredients to create something delicious. This recipe is perfect for this time of year, and I am beyond excited to share! I am sharing a huge secret and I’m going to need you to follow along and make these asap! These whoopie pies will steal your heart, your taste buds and your family will forever ask you to make “those pumpkin sandwich cookie things you made last time.
The big secret isn’t something I usually like to use, but really during the holidays we all need a break. So….go get a box of cake mix and go nuts! Seriously…this will make you go nuts!

What You Need
Pies
`Vanilla Cake Mix
`1 can of pumpkin puree
Cream Filling
`1 stick of butter
`5 cups powdered sugar
`1 cup chopped pecans
`1 tsp maple extract
`splash of milk
Directions
`Whisk together the cake mix and pumpkin until completely incorporated and smooth. (Trust me this works, and turns out amazing.)

 

`Spoon the pie mixture into a piping bag (or plastic bag and snip the tip). On a baking sheet lined with parchment paper - Pipe little piles of the mixture, much like you are frosting the top of a cupcake. Then take a small spatula or butter knife and smooth out the surface. Shape them into pie shells.

`Bake the pies at 350 degrees for about 8-10 minutes. These bake quick! Let them cool on a cooling rack for at least an hour before filling them.

Cream Filling
`Start with room temperature butter. Whip the butter and maple extract.
`Add the powdered sugar and milk until you get a stiff frosting like texture. If it is too thick add more milk. If it is too runny add more powdered sugar.
`Lastly, add the pecans.
`Fill a piping bag and pipe the cream filling onto the cooled pies. Or use a butter knife and spread cream filling.

 

`Sandwich the pies together and enjoy!
(Best if eaten right away–Store in the fridge for up to a week if need be)
