Happy Wednesday! Nothing like starting off hump day with an awesome recipe from one of my favorite people ever…. Jacqui from Baby Boy Bakery. Guys, this girl is legit! Not only did she make that serious rainbow cake from Katelyn’s birthday party last week, but she’s also the Foodie Contributor on Little Miss Momma’s blog.
So get your pinning fingers ready because she’s got a great summer recipe to share with you today.

Now that it is summer I struggle with keeping my ice cream intake to a minimum. I’m the girl who will sneak a spoonful of ice cream in the morning, or even put some in my coffee. I’m disgusting. Anyways, I saw root beer popcicles in a cookbook that had me making my own ice cream center and I wasn’t having it. I also didn’t want to buy ice cream popsicles at the store because they were to big for my toddler to enjoy solo and I hate sharing my sweets with him. So, I figured out a super easy way to make creamy pops small enough for my toddler to enjoy with out going into diabetic shock, and just as good as any you would buy at the store.
I’m supposed to be over here today sharing a recipe, but I’d hardly call this one. I’m not the first to come up with this idea, and I know there are a million variations. However, let me be the one to command you to make these asap and keep them stocked! They are that yummy…and to easy not to.
What You Need
{I made mine with organic-all natural ingrediants. However, you can use whatever you have at hand}
`Good vanilla ice cream
`vanilla beans
`root beer
`paper cups
`sticks
Directions
`Get your cups ready. I placed mine on a baking sheet small enough to fit in my freezer.
`Mix 1 cup of vanilla ice cream, extra vanilla beans and 1/2 cup of root beer.
`Spoon the ice cream mixture into each cup. Filling half the cup.
`Place in the freezer for 1 hour.
`Pour the rest of the root beer into each cup. Then place a stick in each cup.
`Freeze overnight or at least 6 hrs.
`When completely solid. Gently take the cups off the pops.
`Enjoy, outside on a hot day!
What I love most about these pops?!
-They are perfect for summer
-I used thick sticks so it would be easy for chubby little toddler hands to handle
-They make for a sweet snack at night
-They are insanly aaddictive and easy
-You can change up the flavors
-Perfect and cheap for entertaining
-They are a fun way to get your kiddos invloved
See! I told you this can hardly count as a recipe….but at least I planted the pop seed in your head! Go freeze some goodies up for your family to enjoy. Warning–They will consider you a ROCK STAR!!
